A new summer wine & dine offer has been announced by Portmarnock Hotel & Golf Links, offering guests a night’s stay with breakfast and a three course dinner from €225.
Executive chef Thomas Haughton has prepared a special menu for the summer offer. Thomas has over 25 years’ experience training and working alongside some of the world’s finest chefs including Michelin starred Patrick Guilbaud.
The restaurant menus are influenced by Irish and French cuisines, supporting local Irish producers throughout the year.
Diners can choose from starters including duck parfait, new season rhubarb jam, toasted brioche; crispy pigs head, celeriac, mustard; and white onion velouté, confit leek, truffle potato dumplings. Mains include Irish chicken ballotine, stuffed spring morels, bacon, savoy cabbage; spinach and Parmesan tortellini, saute king oyster, early asparagus; and roast Atlantic hake, herb mousseline, sprouted bean and pea salad, crisp fish skin.
The menu is rounded off with desserts such as a créme brulé, warm madeline, raspberry sorbet; citrus vacherin, lemon mousse, blood orange, Chantilly; and an Irish artisan cheeseboard, pear chutney, wheat crackers, soft figs.
