Ireland’s first permanent alcohol-free bar, The Virgin Mary, which opened its doors in May of this year, has unveiled the second edition of its menu.

The new cocktail menu is an expression of the bar’s commitment to pushing boundaries in the drinks industry, not only in Ireland, but worldwide.

The list contains a host of innovative new cocktails, each developed by TVM’s Bar Manager and creative driving force, Anna Walsh.

Commenting on the new menu launch, Walsh said: “Our new cocktails embody the TVM signature style that is clean, complex and balanced. Moreover, they mark the bar’s first use of interesting products and ingredients such as Everleaf Aperitif, Aecorn Bitter and Aecorn Aromatic, Three Spirit Social Elixir and alcohol-free absinthe.”

Cocktails on the new menu include Good Spirits made with Three Spirit Social Elixir, strawberry, lapsang souchong and soda; Daisy made with Aecorn Bitter, rosé, crodino, white grapefruit,
ginger, violet and salt; and Garden Party made with Seedlip Garden 108, pineapple, lime, absinthe, cider and basil. Firm favourites such as Tikki Street and Pink Preacher won’t be going anywhere at the behest of the bar’s regulars.

The beer and wine list also contains new additions, including Brooklyn Special Effects Hoppy Lager, Lervig No Worries IPA and Stop Whining Rosato wine.

Located on Dublin’s Capel Street, The Virgin Mary is open Tuesday to Thursday from 5pm – 11pm, Friday and Saturday from 4pm – 11pm, and 2pm – 9pm on Sundays.
