135 young chef candidates from 12 regions, including two chefs from Ireland, have been shortlisted for the S.Pellegrino Young Chef 2020 Grand Finale.
This year, over 2,400 chefs from all over the world applied to take part in the competition.
Chefs Arlen Oretega from Dublin’s One Pico restaurant, and Nicolas Fagundes from Chapter One restaurant, also located in Dublin, were amongst those selected for the shortlist by a global judging panel, which included Jess Murphy from Galway’s Kai restaurant. Arlen and Nicolas are now one step closer to representing Ireland at the S.Pellegrino Young Chef Grand Finale next year.
Each young chef’s application and signature dish was evaluated by judges at the international educational and training centre for Italian cuisine, ALMA. ALMA’s selection process is based on three criteria: technical skills, creativity, and a personal belief in the transformative power of gastronomy as a device for positive change in society.
From August to December 2019, the candidates will compete in 12 regional challenges. Each region will have a jury composed of independent chefs, who will judge the candidates’ dishes and select four award winners.
By the end of December 2019, the winners of the four awards will move on to the Grand Finale to be held in June 2020. Throughout the months, each finalist will be accompanied by mentor chefs who will provide them with guidance on how to improve their dishes and support them in their preparations for the finals.
