Powerscourt Hotel Resort & Spa has announced the appointment of Darrin Parrish as its new Executive Chef.
Darrin has worked in high profile hotels and resorts in countries including France, Australia, Korea, Jordan and Guam. He has also prepared meals for dignitaries including King Abdullah and Queen Rania of Jordan.
Originally from Sussex, Darrin was opening chef for the Westin Dublin, and he now returns to Ireland to lead Powerscourt’s kitchen team.
Darrin’s cooking style incorporates influences from traditional dishes with added creative twists, using his culinary knowledge gained from working in and visiting countries around the globe.
Darrin commented: “I like to bring in little things from various places I’ve worked and introduce them in dishes here, utilising all the knowledge I’ve picked up along the way. The biggest influence was from French cuisine, very simple flavoursome food without all the gimmicks and theatricals.
“I think there is a return to that, moving away from all the fancy show which I think can just be a distraction. If the taste is good enough then that should be the wow factor, not any visual tricks like dry ice, you really don’t need that and I think people are realising that more now.
“If something looks fabulous but tastes terrible then they won’t remember it, but something that looks simple but tastes amazing, that’s what you remember. I want us to focus on real food and real taste that speaks for itself.”
Darrin will oversee the food and drink establishments at Powerscourt Hotel, including the award-winning Sika restaurant, Sugar Loaf Lounge, and McGills.
Speaking about the appointment, Powerscourt Hotel’s General Manager Ian Wynne commented: “We are delighted to welcome Darrin to the resort team and the skills and talent which he brings with him.”
