David McKane has been appointed as the new Executive Head Chef and Culinary Director at Kilkea Castle in Co. Kildare.
34 year-old David, who most recently served as Chef de Cuisine at the five star Adare Manor, creates menus using local produce and high quality ingredients. Prior to Adare Manor, he was Sous Chef at the five star Ballyfin Demesne, and Sous Chef at the Lyrath Estate.
In late 2017, David travelled the country in a camper van with four other chefs, visiting local farms and producers on his way in search of the best produce in Ireland. The resulting article on foodandwine.com highlighted producers such as Mossfield Cheese in Co. Offaly and Abernethy Hand Made Butter in Co. Down.
Throughout the resort, which recently completed a six year, $30m renovation and refurbishment, David has created contrasting dining experiences. He and his team, which now includes local pastry chef Paul Fleming, have designed a variety of menus to suit different palates.
Every menu will feature signature dishes showcasing locally sourced ingredients, such as Kildare Farm Sausages, Duncannon Smokehouse Salmon, Dexter Beef, fresh Hake from CS Fish, and Monesterevan Duck.
