Following on from the success of the Fit-Out Expo as part of the Hospitality Expo 2018 a new Hospitality Fit Out event is taking place 1st and 2nd of May in the Shelbourne Hall, RDS. The demand for hotel rooms and eateries has resulted in a revolution in the design of the physical property and experience offered.

Hospitality Fit Out aims to provide hotel, restaurant, bar and venue owners, operators and developers with a showcase of the latest concepts in design, an oversight of what works and what does not together with presentation relating to recent highly successful developments and refurbishments.

Data from travel research firm STR has revealed that absolute occupancy rose to 83.8% at Dublin hotels in 2018. Revenue per available room grew for the eight year in a row last year, increasing 7.2% on figures for 2017 to €121.70.

Demand has changed, customers are moving up market and are happy to pay a premium for new and innovative hotels, eateries and bars. To meet this new competition every operator and proprietor needs to review their premises and their product offering.

At the hospitality development Summit visitors to the event can watch the process unfurl from design concept through to fit out completion of one of Ireland’s well known landmarks Café En Seine.  Millimetre Design had the daunting task of refurbishing one of Dublin’s most iconic bar, Café en Seine.  Established in 1993, Café en Seine was Dublin’s first Superpub and a leading destination venue.  However, in recent times it was under-performing and the once famous brand had become exhausted. Both press and industry were advising that the era of the Superpub was dead, however, the brave decision was made to save the venue from redevelopment. The brief was to transform this Superpub into a vibrant and stylish, all-day food and drinks venue.

The new Café en Seine has been designed with incredible flair and supreme attention to detail. Taking inspiration from its French name and with strong Art Deco, Art Nouveau and French Colonial influences, Dublin’s most iconic Superpub has been completely re-imagined. The stylish haven, spanning over three floors, now includes a designated restaurant area, several beautiful bars, bespoke event areas and an impressive indoor street garden.

And its not all about the big budget refurb either, as Angela Murphy from Angela Murphy Design Associates will showcase her award winning bar refit of O’Lochlainn’s of Ballyvaughan where she has reproduced the real old gem of a pub which when you enter feels like you have gone back in time and expect WB Yeats or similar to be sitting in the corner reading a poem by the open fire.


In October 2018 BWG announced plans to invest €25 million in store refurbishments to the Spar chain across Ireland. Declan Ralph will give practical tips and advice on how they developed a clear strategic plan to maximise the space in each premises with minimal disruption.

Eamon Elders from Creation Station will follow on from Declan as to the trends and pitfalls seen during the design process of these fit outs and why we need to slow down when making decisions and take our time to ensure that we have our research completed before fitting out spaces.
