George Motz, the American burger filmmaker, historian, author, and proponent of the smash burger technique, is bringing his world-famous burger pop up to Dublin.

Fresh from London, Paris and Copenhagen, George will be serving his version of the Oklahoma Onion Burger at an outdoor cook out on Thursday 19th May at Urban Brewing at chq Building. This one off event is presented by independent burger joint, Dash Burger, whose crispy, caramelised smashed burgers are directly inspired by George’s recipe.

As well as a chance to ‘eat and meet’ with George, there will be craft beers on tap from O’Hara’s Brewery, a cocktail bar from Dash Burger’s northside neighbours Craft Cocktails, and live DJs.

The George Motz World Tour Dublin Burger Pop Up presented by Dash Burger kicks off at 17.30 to 20.30 on Thursday 19th May, Urban Brewing at chq Building, Custom House Quay, IFSC. Outdoor and indoor seating is available.

In celebration of the visit, Dash Burger will have a special burger on the menu at its Kevin Street and Capel Street locations the week of 19th May. The Double Double Animal Style burger pays homage to In & Out Burger from LA, with Double Smash Patties, American Cheese, Pickles, Lettuce, Tomato, Grilled Onion and Animal Sauce.

Dash Burger uses a blend of 28 day aged on the bone beef from grass fed cattle, freshly minced daily. The bun is a speciality potato roll, fluffy, soft and light, as close as possible in flavour to those served at Shake Shack and In-N-Out Burger in the US. What sets Dash Burger apart is the smash technique, which produces a caramelisation all around the surface exterior.

Founder and self-taught chef Barry Wallace launched Dash Burger on Kevin Street during the pandemic in September 2020, as an independent burger joint, serving smash burgers inspired by George Motz. A second location on Capel Street followed a year later in September 2021 and with his new business partner, Irish rugby international James Ryan, providing support. The venue has just expanded with new outdoor seating for the summer, and is now serving beer on tap.

George will also be signing copies of his bestselling cookbook The Great American Burger Book at Hens Teeth, Blackpitts, Dublin 8 on Wednesday 18th May from 17.30-19.30.
