The Exchequer Wine Bar and Restaurant Ranelagh has launched a new food and wine pairing concept called The Regional Series, which will see a wine region focused on each month.
The concept was created by head chef Marty Montgomery & sommelier Javier Tena. For the month of May the focus is on France.
During the month, guests can enjoy three classic French-inspired dishes such as a bouillabaisse seafood soup of pollack, mussels and prawns, served with sourdough and traditional rouille - a traditional Provençal fish stew from the port city of Marseille. Paired with Domaine Vacheron, Sancerre from the Loire Valley, the edgy minerality and saltiness will match the soup without overpowering the flavours of the seafood.
A heartier main course of Bourguignon beef cheek is cooked slowly for hours and takes on a rich, earthy flavour. A bold Le Haut Medoc d’Issan, 2015 Bordeaux Blend, can be matched to take on this dish.
Finally, lovers of blue cheese can choose the chicken dish, rich in Roquefort and complimented with cabbage, fried almonds and pancetta – available with both a red and white selection from Javier.
After dinner, the cocktail menu offers classics with a twist such as the smokey old fashioned, Dublin calling and many more.
The French Regional Series menu is available now in The Exchequer Wine Bar and Restaurant in Ranelagh. Spanish Season will follow from May 28th – June 31st.
