Wholesale butchers M&K Meats and their retail outlets, The Market Butchers, have secured a ten-year exclusive deal with Lambay Island, whose produce includes beef, lamb and wild game.
Lambay Island beef has already been accessible to diners in the likes of the Michelin-starred l’Ecrivain Restaurant and Howth’s Aqua Restaurant.
As Derry Clarke of l’Ecrivain explained on RTE’s recent Ear to the Ground showcase of Lambay Island produce, the opportunity to source high quality meat from this Dublin Bay landmark is very welcome. “To have beef on our menu from Lambay Island is very special,” Derry said. “It’s real, it’s honest and it’s local.”
Bought at the turn of the 20th century by avid natural historian Cecil Baring, Lambay Island remains under the protection of Baring’s legacy in the form of the Lambay Estate Company.
