Cunning Little Fox Breathes New Life into Ennistymon

In the world of fairy tales cunning means clever, and this is what you will find in Niamh Fox’s kitchen - just pure, simple and clever flavour combinations, Niamh's cooking is a perfect balance between hearty comfort food and decadent dining.

Niamh Fox brings her unique, inspired whole-hearted cooking to Main Street Ennistymon as of August, to a new restaurant called Little Fox.

Little Fox is a culmination of Niamh's many years of kitchen experiences and her partner Sam Gleeson's passion for design. It will serve locally grown food, intertwined with the natural rhythm of the seasons, cooked with heart and flair.

Little Fox will champion seasonal local produce and is aiming to be a zero waste eatery. The menu highlights include West Clare pollock, mussels and potato stew with ramson aioli and crusty sour dough; stuffed French toast with mascarpone and rhubarb with an almond crunch; and Moy Hill farm salad of beetroot hummus, bitter greens, whipped St Tolas goats curd, hazelnut dukkah and spiced tandoor flatbreads.

Since moving to Co. Clare to start a farm and family with her furniture designer and knife maker husband Sam of Thisiswhatido, the duo combined talents creating a thriving smallholding, growing enough to eat and share, keeping pigs and hosting visitors in various long table dinner evenings.

Educated and trained at GMIT, Niamh started her love affair with food at the age of 17, working with Aoibheann McNamara in Ard Bia Galway, Denis Cotter of Cafe Paradiso Cork, and Margot Henderson in Rochelle Canteen London. She has cooked with the calibre of Jess Murphy in Kai Restaurant Galway, Katie Sanderson in Dillisk, Ted Burner in Ballymaloe, and Cliodhna Prendergast and Imen O’Donnell of Lens and Larder.

Sam's work has graced the likes of the Fumbally café and Stables, The National Gallery, and Dillisk Food Project, and has completed knife commissions to famed UK chef Nathan Outlaw and actor Domonic West.

Little Fox will be open from 8am for breakfast and lunch daily. Brunch will be served on Saturdays and Sunday from 10am to 5pm.
