Aramark Northern Europe has launched Plant Market, its new plant-forward offering designed by Paul Gayler MBE.

The Plant Market concept places an emphasis on vegetables, fruits, whole grains and legumes, while still offering a small quantity of animal protein, to maximise both flavour and nutritional value.

Developed alongside Aramark Culinary Director Derek Reilly, Plant Market offers plant-forward food options designed to tempt vegan, vegetarian, flexitarian and meat-eating diners alike. The concept also prioritises supporting local producers, where possible.

Sample breakfast dishes include chermoula chickpea bubble fritters with a zaatar rice bowl, and tomato tofu risotto with salsa verdi fine beans.

The launch sees Aramark expanding its plant and protein-based food choices across corporate, leisure and offshore dining facilities throughout the UK and Ireland.
