The Carlow Brewing Company has released details of the 8th edition of its Barrel Aged series, which sees its most popular beers aged in whiskey barrels for three months.
For the 8th edition, the brewery has taken its O'Hara's Leann Folláin stout and then aged it in first fill American bourbon oak barrels supplied by the Dublin Liberties Distillery, based in Dublin 8. After ageing, the beer is then bottle conditioned to give a gentle carbonation, bringing out the best of both the stout and the bourbon.
Described as an excellent dessert beer, it also pairs well with slow cooked rich meats and stews, and some game. It works particularly well with traditional Irish stew, or beef wellington, or serve it as an alternative twist to complement a cheese board, it goes great with blue creamy cheeses - in particular Cashel blue.
The eighth edition of O’Hara’s Barrel Aged Series: Leann Folláin, with an ABV of 8.1%, is available in select independent off-licences in a 75cl cork and cage bottle, RRP €12.99.

The only downside is that it has created very high expectations! Some people might think it risky to mess around with Leann Folláin which is such a good beer in its own right but my philosophy is that while you can never be 100% certain what the barrel ageing process will do to a beer, if you put a great beer into the barrel it increases your chances of an exceptional beer coming out of the barrel!

As well, Carlow Brewing Company has released details of its festive craft beer staple, O'Hara's Winter Star 2018. Distinctive by its light copper tone and lightly carbonated white head, the natural spiciness delivered by O'Hara's seasonal Spiced Rye Pale Ale, is enhanced by rye malts, which makes for a rich mouthfeel with a touch of warmth.
